Manuka

Manuka is the varietal our beekeepers plan the whole season around. The flowering window is short and weather-dependent, so every batch is a limited harvest — dense, dark amber, and thick enough to hold a spoon standing upright.

Expect a bolder, more mineral flavor than our other honeys: earthy, slightly bitter on the back end, and a texture that stays structured rather than runny. It’s the varietal chefs reach for when a dish needs honey to hold its own rather than disappear into the background.
